Hailing from Labourd - Basque province in France, gâteau basque is a real treat for pastry lovers. The sablé style crust with higher proportion of leaveners renders a crisp top and a sponge like interior. Traditionally filled either with pastry cream or a black cherry jam, it’s light yet indulgent.

My take here is a crisp melt in the mouth double sweet pastry encased coconutty crème pâtissière perfumed with kewra (pandan blossom) water and a thin layer of pineapple jam. As described by my primary taste tester … “its truly sublime and probably one of the best slices of my life”🤌🏾
