UFS Diwali Special

from $8.00

Diwali, the festival of lights, celebrates the triumph of light over darkness, and it’s celebrated with food: sweets, savory snacks, and tables full of things to share. UFS’s Diwali drop is where spice-route baking meets the flavors I grew up on. In 2024, Eater Chicago’s Diwali guide featured our rose-lime mooncakes, mithai canelé and chaat masala sweet potato focaccia, and it helped make that drop one of our most successful ever. All three are back this year, joined by something new, the Shikanji Tart. Vegetarian, nut-free, and baked from scratch at home.

Diwali is a holiday for coming together, with family, friends and neighbors, and sharing is how it’s done. That’s why most of this menu is sold in sets, sized for gifting, hosting and passing around. Cooking for one or two? The rose buns, focaccia, scones, hand pies and namoura all freeze well, so you can freeze a set and reheat a few at a time. The moongcakes and tarts keep refrigerated for 4-5 days, and the canelés are best enjoyed fresh.

Presale closes Wednesday, November 4 at 5 PM CT, or when we sell out, whichever comes first.

SAVORY

ALOO BONDA ROSE BUNS WITH CURRY LEAF SLAW (G), vegan
Set of 4: $20 | Set of 8: $37
A ubiquitous breakfast or tea time snack from Southern India. Aloo Bonda is a spiced potato mixture that’s battered and deep fried. My version here has a delectable potato filling spiced with mustard, cumin, tamarind, chile peppers, herbs and encased in a dainty rose shaped soft turmeric milk bread roll. It’s delish on its own but with a side of curry leaf slaw, it’s the ultimate savory treat experience to share with friends and family!

CHAAT MASALA SWEET POTATO FOCACCIA (G, D)
Full 13" x 9" pan: $30 | Presale only
No UFS drop is complete without a seasonal Focaccia… I invariably sell out of these first at every single popup! My signature focaccia loaded with sweet and spicy Chaat Masala and pomegranate molasses glazed Sweet Potato, pickled onions, fresh herbs and melty cheese. With a good squeeze of lime it’s sheer heaven!
Serves 4-6 as a side. Slices available at the popup for $7.

GARAM MASALA CHEESE GARLIC CHIVE SCONES (G, D)
Set of 4: $22 | Set of 8: $40
Tender garam masala and fresh garlic chives infused scones speckled with cheddar and parmesan cheese and a side of whipped spiced chive cream cheese. A unique yet familiar “nashta” to accompany your tea!

LEEKY MASALA HAND PIES (G, D)
Set of 4: $22 | Set of 8: $40
A fusion of Indian Kachodi and American Pie. Flaky golden pastry filled with spiced potato, caramelized leeks and onions. A savory pie that you didn’t think you needed in your life!
Each pie is approx 4" x 4" square.

SWEET

NAMOURA (SEMOLINA CAKE) TRAY (G, D, SE)
9" square tray: $25 | Presale only
Hailing from the Levantine region, this is a typical centerpiece during many festivals. In my version, a tender semolina cake that’s nut-free and drenched in a cardamom, blood orange juice and orange blossom syrup and finished with candied oranges. Think “Sheera” in a less sweet cake form?!

ROSE LIME MOONGCAKES (D)
Set of 6: $25 | Set of 12: $48
The epic crossover between Green Mung Bean pastry from China (popular dessert eaten during Dragon Boat Festival) with the traditional Moong Dal Halwa from India (mostly in Northern and North-Western Regions). Perfumed with rose water, lime zest, gulkand (rose petal jam) and lime leaf, these are going to be a truly memorable dessert experience.
Each moongcake is about 50g.

MITHAI CANELÈ (G, D, E)
Set of 6: $22 | Set of 12: $40
This petite French classic from Bordeaux meets the soul of desi mithai — where saffron, cardamom, and rich dairy come together in harmonious indulgence.
For the uninitiated: beneath its deeply caramelized shell lies a tender, custardy heart — perfumed with warm spice and nostalgia. A festive nod to the sweetness of home, reimagined through a slow-baked French lens.
A golden bite that bridges two worlds — elegant, aromatic, and unapologetically celebratory.

SHIKANJI TART (G, D, E)
Individual: $8 | Set of 4: $30
Presale tarts come with the meringue shards packed separately, so they stay crisp. Add them right before serving.
A dessert that captures the feeling of North Indian summer in a single bite, while exploring a pairing I keep coming back to: citrus and chocolate.

Shikanji, the beloved South Asian limeade, is all about balance — lime, sugar, black salt (kala namak), and warming spices such as cumin and black pepper coming together as something bright, tangy, salty, and gently spiced.

My take leans into that idea with a more layered citrus profile — a blend of lime, calamansi, and navel orange juices for a fuller, more rounded flavor.

Built into pastry, it becomes: a mint-infused pâte sucrée shell, a hidden layer of salted milk chocolate ganache, shikanji-inspired French-style cream, and finished with shikanji spice-infused baked French meringue shards.

The result is all about contrast — zesty citrus cutting through silky chocolate, sweetness balanced with salt and spice.

A nostalgic drink, reimagined through the UFS lens.

Prices shown before tax. No bulk orders. Limited quantities. Allergen key: Gluten (G), Dairy (D), Egg (E), Sesame (SE)
